Apple Pie Baked Oatmeal

It really is true when they say an apple a day keeps the doctor away. Apples are full of health benefits, they’re easy to transport (throw one in your bag and go!) and they meld into recipes beautifully. So, why apples?

  • Apples can contribute to a healthy heart- they’re high in fiber and there are studies that have shown that people who eat more whole fruits are less likely to develop high blood pressure
  • Apples can help with weight management- one apple can fill you up, for under 100 calories. Grabbing an apple when you start to feel hungry will keep you fuller for longer, so you’ll be less likely to overeat at meal time
  • Apples can reduce your risk of type 2 diabetes- research has shown that the fiber from some fruits help stabilize blood sugar. Flavonoids, a type of antioxidant, also play an important role in the prevention of diabetes.

Sold, right? Well if you’re looking for an interesting way to add apples to your diet, other than just grabbing the whole fruit, I recommend trying this apple pie inspired baked oatmeal cup recipe. It’s inspired by the flavours of an apple pie, but is significantly healthier for you. Hope you enjoy!

Ingredients

  • 2 ripe medium bananas
  • 2 cups gluten free rolled oats
  • 1 peeled and diced apple
  • 1/2 cup milk or dairy free milk
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp cinnamon

Recipe

  • Preheat your oven to 375
  • Mash the bananas in a bowl
  • Mix in all remaining ingredients except the apple
  • When a batter is formed, gently fold in the apple chunks
  • Pour batter into lines muffin tin, bake for 15 minutes or until a toothpick comes out of the center of the muffin clean

Done! Your apple pie baked oatmeal is ready to eat!
