I had a flash of inspiration last Sunday night and decided I needed to make teriyaki bowls. It wasn’t even that I wanted to, I simply HAD to. With that being said though, I knew I wanted to make my own sauce, and then build bowls from there.
The requirements for my sauce recipe was simple, I wanted one with minimal ingredients that I could pronounce.
After a bit of googling, I ended up using a recipe from Brewing Happiness and it was a huge success! I was shocked actually at how much it resembled a bottled version- it was thick, a little sweet and a little spicy from the fresh ginger.
The trick to bowls like this is pick your protein and your base, then pick some veggies that you either have at home, or are easy enough to grab. These bowls were chicken or cauliflower, with bok choy and broccoli on plain white rice.
I preheated the oven to 350, then I baked the chicken and the cauliflower (in 2 separate dishes) seasoned with salt, pepper, garlic powder and onion power. Different protein will take different amounts of time to cook, but the trick is to add the sauce to the chicken for the last 15 minutes of cook time. For the veggies, I just tossed the cauliflower before serving.
The base of these bowls was white rice (cook according to the package instructions- I always omit any butter though) BUT this can be swapped for quinoa or brown rice.
Finally I made a quick stir fry of baby bok choy and broccoli seasoned with ginger, sesame oil, garlic and tamari.
Everything was then piled onto the rice base and voila! Dinner was served! It’s fun because you can add on more toppings and people can create their own bowls. The more you add, the more combinations you can make!

Teriyaki Sauce Recipe
- 2 tablespoons cornstarch + 1/4 cup water
- 1 cup water
- 1/4 cup tamari
- 1/4 cup honey
- 1 garlic clove, minced
- 1/2 teaspoon fresh ginger, grated (I used a bit more than this- I love ginger though!)
- In a small bowl mix together your cornstarch and water, and set aside.
- Heat a small pot over medium-high heat. Add in your water, soy sauce, honey, garlic and ginger. Stir.
- Just as it begins to bubble, add in your cornstarch mixture and stir continuously for 7-10 minutes.
- Take off the heat and set aside for 5-10 minutes to let it thicken
**Stir before serving- once the sauce has been sitting it will need a good stir before you eat it.
